Harvesting Method: Hand Harvested
Soils: Moraine, sand, loam, porphyr
Filtration: No fining, light filtration
Fermentation: Spontaneous with pied de cuve, délestage for 1-3 times a day for 5 days, pump over 1 time day for 18 days
Maturation: Large wooden barrel for 12 months
