Ripe dark fruit (think the best summer time cherry) is complimented by savory, herbaceous notes and hints of cocoa. Its mild acidity and fuller body make for wonderful structure!

Farming Practices: Traditional pergola as well as high density spur cordon and single guyot; all hand-harvested andfarmed sustainably
Harvesting Method: Hand-harvested 
Soils: Mostly calcareous clay with alluvial sediments.
Fermentation: After destemming a short, warm maceration in stainless steelFiltration: without fining or filtration.
Maturation: Aged in stainless steel to preserve freshness, then bottled by gravity
