Burgundy does Burgundy in this lovely classic. Playful fruit (see: raspberry, cherry, wild strawberry) and shy-but-showy florals (violet, rose) round out a palate that finishes with a dash of spice. Good acidity makes this wine very food-friendly, pairing with sweet-and-tangy glazed chicken or bolder BBQ dishes.

Francis Lechauve grew up in the small winemaking town of Meloisey and started helping a winemaking neighbor at age 12. He began his wine career in 1989 and 17 years later, after much hard work and learning, he started his own domaine, L’Eveil des Sens. He focused his production in a way that expresses the terroir and the longstanding history of the Côte de Beaune.

  • Fermentation: Ferments in stainless steel vats for about 15-25 days. The juice is then taken from the tank, lightly pressed, and put into oak barrels
