Fresh as can be, don't let this label fool you. This organic easy-drinker is all about great texture and salty minerality – with an ever-so-slight funk on the palate. Lighter in style, with Meyer lemon and crunchy green apple flavor, each sip ends with a touch of yeastiness. Oyster wine, obviously.

Founded in 1838 by William Deutz and Pierre Gelderman, this honorable Champagne house is based in the historic town of Ay — one of the 17 top-rated Grand Cru villages of Champagne. Total production is about two million bottles with 75% of the grapes coming from Grand and Premier Cru vineyards. The estate is spread over five villages, including some of the most beautiful locations in the Champagne region, which is why Deutz has developed an undeniable level of prestige.

Soil Type: Clay/Limestone
The harvest takes place over a 10-day period, generally between Sept 15-Oct 15 and are hand-harvested using the utmost scrutiny. The grapes are then carefully transported to the grape press to be pressed using automatic and traditional Coquard basket presses. Malolactic fermentation of 100 percent is used. The wine is fermented in 3,000-gallon tanks at 62 degrees Fahrenheit for two weeks. The wines are then left to age and hand riddled in traditional riddling racks.
